A quick and super tasty snack to pair with drinks, add to a cheeseboard or just eat! Hot, spicy, sweet and very moreish.
Ingredients
1 tbsp coconut oil
25g jaggery (approx 2 tsp, crumbled)
200g cashews
1/4 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp chilli flakes
1/4 tsp crushed black pepper
1/2 Sea salt, to sprinkle
Method
Preheat oven 140 fan (Gas mark 3)
Melt the coconut oil slightly if solid in a pan or for around 5-10 seconds in the microwave and mix in the jaggery
Add the cashews and coat using a spoon or your hand and then add the spices and mix through
Spread on a tray lined with greaseproof paper and bake for 10 minutes
Remove from oven and give everything a stir as the jaggery and oil may have pooled around the nuts. This will re-coat them. Place back in oven and bake 4-5 mins
Sprinkle with sea salt and mix. Allow to cool completely and enjoy immediately, or store in an airtight container for upto a week
